Roasted Cauliflower with Gruyere: A Meal in Itself


It doesn't get easier and more delicious than this roasted cauliflower with Gruyere cheese. We made it the other night and served it next to a rack of barbecued ribs from our 4H pig. The ribs were good, but honestly it was about the cauliflower. This dish is the main course.

Ingredients:
Cauliflower
Olive oil
Gruyere Cheese
Salt and Pepper

The process:
Pre-heat the oven to 450 (or use the broiler)
Par-boil the cauliflower until you can insert a fork easily. Drain. Baste the cauliflower lightly in olive oil. Sprinkle with salt and gruyere cheese.  Add cracked pepper to taste.  Bake or broil until brown and bubbly.

There is plenty of gozo at Rio Gozo Farm. That is JOY in Spanish and joy is one of the most dependable products we have. Gozo is commonly found in gardens and farms. Once you get a little gozo up and going it is very tolerant of most pests, withstands dry periods, and grows with a modicum of fertilizer. After gozo becomes a staple of one's diet, it goes with about anything. Actually folks crave it so much it is a wonder everyone does not have a patch of it growing close at hand. Grab up some gozo and get with the flow.
