Fried Sage isn't a "What to do with sage?" cop out. It is revelatory.
And this dish is a quick revelation.
Batter your sage leaves in flour, salt, pepper, egg and bread crumbs or cornmeal. I use the stems as a way to dip in the oil. Use any oil or butter. Fry on high heat till golden brown.
Serve hot.
