Grilled "bad boy" Vegetable Salad with Basil





Take a bunch of veggies.  


Ingredients:
I used Yellow Squash, Fennel, Carrots, Zucchini, Onions - but anything will work.

Cut a small onion into 8 wedges. Cut your other veggies big enough to grill - usually quarters is good, even for carrots (the long way of course).
Make some garlic oil by dicing garlic really fine, and I like putting it in some olive oil - 1/3 a cup should be good.
Put your veggies on a baking sheet and brush with garlic oil.
Barbecue those bad boys.  Use the sheet if you want, or stick the big pieces right on the grill.  Cook til' they're a little charred and pretty tender, it took mine about 4-7 minutes, depending on the vegetable.  
Cube everything you just grilled.  Burn your fingers because you're impatient.  I did.  


Chiffon some beautifully fresh basil, and toss with the cubed veggies and the rest of that olive oil.  Put some salt on it.  


Eat (with a good steak and blue cheese).

There is plenty of gozo at Rio Gozo Farm. That is JOY in Spanish and joy is one of the most dependable products we have. Gozo is commonly found in gardens and farms. Once you get a little gozo up and going it is very tolerant of most pests, withstands dry periods, and grows with a modicum of fertilizer. After gozo becomes a staple of one's diet, it goes with about anything. Actually folks crave it so much it is a wonder everyone does not have a patch of it growing close at hand. Grab up some gozo and get with the flow.
