Carrot Waffles

This Sunday is Mother's Day, and we hope you get to spend at least part of the day with a mother that you love. Why not make Mom breakfast? We hear they like that. Save some of your carrots for breakfast, and you can give Mom a little extra Gozo on Mother's Day.

1 3/4 C flour
1 Tbs baking powder
1 tsp cinnamon
1/2 tsp salt
2 eggs, divided
1 3/4 C milk
1 C shredded carrots
1/2 C oil

Mix dry ingredients and set aside. Mix yolks, milk, oil and carrots, then blend into the dry ingredients. In a separate bowl, beat whites until soft peaks form, then gently blend the whites into the batter.

Bake on a hot waffle iron!

There is plenty of gozo at Rio Gozo Farm. That is JOY in Spanish and joy is one of the most dependable products we have. Gozo is commonly found in gardens and farms. Once you get a little gozo up and going it is very tolerant of most pests, withstands dry periods, and grows with a modicum of fertilizer. After gozo becomes a staple of one's diet, it goes with about anything. Actually folks crave it so much it is a wonder everyone does not have a patch of it growing close at hand. Grab up some gozo and get with the flow.
