Green Garlic Round-up

Confession time here – garlic messes with my system like nothing else, so I tend to use it in small quantities and always always cook it thoroughly. I was hoping that perhaps green garlic would be different somehow, but I threw some (raw) into an aji sauce (more on that deliciousness here), and it completely messed me up. Apparently, I’m part vampire. So, given my personal issues, I’m going to forgo the traditional one-recipe approach here and just give you all an internet recipe round-up of what I imagine would be the yummiest green-garlic recipes, if I had the courage to actually make any of them.

There is plenty of gozo at Rio Gozo Farm. That is JOY in Spanish and joy is one of the most dependable products we have. Gozo is commonly found in gardens and farms. Once you get a little gozo up and going it is very tolerant of most pests, withstands dry periods, and grows with a modicum of fertilizer. After gozo becomes a staple of one's diet, it goes with about anything. Actually folks crave it so much it is a wonder everyone does not have a patch of it growing close at hand. Grab up some gozo and get with the flow.
