8 oz Feta
1/2 C EVOO
2 - 3 Tbs lemon juice
1 Tbs water
salt and pepper
1 large cucumber, peeled, seeded, and cut into dice
1 small red onion, cut into dice
1 Tbs chopped mint
1 Tbs chopped parsley
1 Tbs chopped dill
Pita bread for serving
Crumble feta into a bowl, and mash with EVOO, lemon juice, water, salt, and pepper. Stir in cucumbers, onions, mint, parsley, and dill. Serve with pita.
